Vegetable porridge khichdi is a healthy delicious dish. If you don’t know much about cooking, don’t worry. It is easy to cook in no time. Ingredients are easily accessible in your kitchen. If you are a vegetarian and diet-conscious too, it may be the best option for breakfast, lunch or dinner.

Ingredients:

Porridge                              4 tbsp (roasted)

Peas                                     1 tbsp

Carrot                                  2 tbsp (finely chopped)

French beans                      1 tbsp

Broccoli                                2 florets (finely chopped)

Onion                                    ½ (finely chopped)

Garlic                                      2 cloves (finely chopped or crushed)

Chana dal                                ½ tbsp.

Moong chilka                          ½ tbsp

Fresh coriander leaves          few

Salt                                           to taste

Turmeric                                 1/3 tsp

Red chilli powder                  ¼ tsp

Olive oil                                  1 tsp

Method:

Heat olive oil in a pressure cooker.

Add crushed garlic and chopped onion. Saute for a minute.

Add all other vegetables and spices. Saute for a minute.

Add roasted porridge, washed and soaked chana dal and moong chilka dal and two and a half cups of water.

Give a whistle on high flame and let it simmer for ten minutes on low flame.

Turn off the flame.

Remove the lid after pressure comes out on its own.

Add fresh coriander leaves.

Serve and eat hot with fresh yogurt and green chutney. 

If you are staying alone and have no time to cook a healthy meal, try preparing vegetable porridge khichdi. It will take hardly 15 minutes but will be tastier and healthier than Maggie.
