Start your morning off right with a simple yet healthy breakfast- ‘Vegetable Rava Upma’. It is fast, easy, delicious, nutritious and of course a breakfast favourite. Let you live up your day to its full potential with this South Indian light snack food. The vegetables which are added are health food rock star. This food will also help cut cravings all day long.

Ingredients:

Suji                                  1 cup

Fresh yogurt                  1 cup

Cauliflower                   100 grams

Carrot                            1 (medium)

Peas                               1/3 cup

Potato                          1 (small)

Onion                           1 (medium)

Lemon                          1

Mustard seeds            1 tsp

White urad dal            1/2 tsp

Coconut                        2tsp (grated)

Curry leaves                 5-6

Whole red chilli           1 (crushed)

Salt                                 to taste

Red chilli powder        ½ tsp

Pure ghee                    1 tbsp

Method:

Chop potatoes, onion, carrot and cauliflower fine.

Roast suji on a low flame till it is slightly golden brown.

Take a deep pan. Put ghee. Add mustard seeds and crushed whole red pepper. When they start to crackle add curry leaves and raw urad dal, roast for a second.

Add grated coconut and roast for few more seconds.

Add onion and cook till golden.

Add all other vegetables, stir and add salt, red pepper powder. Mix well.

Cover the pan and cook the vegetables on low flame till tender.

Uncover the pan. Add yogurt, give a good stir.

Add three cups of water. Give a boil.

Add suji after a boil comes.

Stir on low flame.

Squeeze the juice of lemon and mix well.

Cook on low flame till water gets absorbed completely.

Serve hot with tomato ketchup and coconut chutney.
