Cooking time: 5 minutes

Ingredients:

Big Papad 2 (raw)

Potatoes 2 (boiled and peeled)

Onion 1 (finely chopped)

Green coriander leaves few

Red chilli powder ½ tsp

Salt to taste

Tamarind powder ¼ tsp

Garam masala ¼ tsp

Oil to fry

Method:

Prepare stuffing masala – mash boiled potatoes well. Heat tablespoon oil in a non-stick pan. Add chopped onion, saute for two minutes. Add mashed potatoes and all spices and salt. Cook on low flame for five to 10 minutes stirring occasionally. Add coriander. Mix well. Turn off flame. Keep aside to cool at room temperature.

Now take big papad.

Leaving a little space on a side place the potato stuffing length-wise like you stuff a spring roll. The stuffing should not be warm at all.

Wrap the papad carefully keeping the stuffing intact as you do while preparing spring rolls. Press the role gently so that the stuffing gets stuck to papad surface.

Heat oil in a pan for deep frying.

When the temperature of oil becomes just appropriate to fry, put rolled papads carefully in it one by one.

Fry them till golden flipping on both sides.

Take out on a kitchen towel and serve hot and crisp.

You can also cut the papad roll before frying if you want to serve it in small pieces like spring rolls. You can fry these pieces with the same process.

This snack will leave everyone gushing about your culinary skills. It makes for a great snack with any salad too.
