Weekend recipe: Kurkura stuffed papad roll

Snacking can be real fun, isn’t it? Enjoy idli in a different way. It can be a crowd-pleasing party snack.
There are so many different kinds of snacks out there you can please anybody – and you can make them at home faster than you can go to the store and buy some. Bread idli is a snack through which you can stuff so much flavour into one bite. Few ingredients, more fun. It’s a dish that makes your snacking a bit more interesting.

Ingredients:
White bread 4 slices
Potatoes
Fresh thick yogurt 4 tbsp
Curry leaves few
Salt
Whole red pepper 2 (crushed)
Mustard seeds 1/3 tsp
Mustard oil 2 tsp

Method:
Beat yogurt till smooth. Add salt and mix well. Heat one teaspoon of oil in a pan. Add mustard seeds, crushed pepper and curry leaves. Add this tempering to yogurt and mix well.
Cut bread pieces in round shape removing the edges with the help of a sharp edged round bowl. Keep aside.
Mash potatoes and mix salt well.
Make four equal round balls of potato mixture and flatten them.
Keep these potato tikkies one on each round bread pieces.
Heat few drops of oil in a non-stick pan. Place round bread piece keeping tikki side down.
Spread one tablespoon of tempered yogurt on the top.
Cover the pan and cook bread idli on low flame till the bottom becomes crispy golden.
Serve hot with tomato ketchup and coriander chutney.
