Bring together family and friends this weekend by cooking and serving them a tasty snack that’s so unusual. This dish is the must-eat.

This is traditionally a combination of rice, cheese and saffron, served as saffron rice balls; somewhat like our yummy cutlets. In this more exotic form – a mixture of rice, cheese, saffron, spices, herbs and capsicum is rounded into balls, coated with dry bread crumbs and deep fried into delicious snack which is crisp from outside and soft from inside.

Preparation time: 30 minutes

Cooking time: 15 min

Ingredients:

Rice: 1 cup (washed and soaked for 15 minutes)

Saffron few strands: (10 – 15 strands)

Onion: 1 (finely chopped)

Red capsicum: 1 medium (finely chopped)

Parsley: ½ cup (finely chopped)

Mozzarella cheese: 1 cup (grated)

Salt: 1 tsp

Red chilli powder: ½ tsp

Freshly ground black pepper: ¾ tsp

Butter: 2 tbsp

Bread crumbs to coat

Oil to fry

Method

Heat butter. Add chopped onion. Saute for a minute. Add washed rice and stir fry for few minutes. Add saffron, salt, red pepper powder and black pepper powder. Add two cups of water and give a boil. Cover and cook on low heat till all the water is absorbed and rice is cooked. Turn off flame. Add all ingredients except bread crumbs to boiled rice and mix well. Mash the rice lightly and let the mixture cool. Make small balls. Coat them with dry crumbs. Heat oil in a deep pan. Deep fry golden brown. Serve hot. Truly awesome dish. Worth trying!
