Semolina-tomato pancake is a variety of suji (semolina) snacks that is full of protein and iron. The healthy carbohydrates are good for boosting energy. These pancakes are a perfect breakfast or teatime snack. This snack dish digests slowly in the stomach and keeps you full for long. The three main ingredients of this snack are semolina, tomato and yogurt. This recipe can be made in no time and also does not require any particular condiments to it.

Ingredients:
Semolina: 1 cup
Fresh yogurt: ½ cup
Water as required
Tomato: 3 (large)
Garlic cloves: 4-5
Ginger: ½” piece
Onion: 1 (medium
Green chillies: 2
Coriander leaves: 2 tbsp (finely chopped)
Salt to taste
Chilli flakes: 1 tsp
Oregano: 1 tsp
Method:
Mix yogurt and semolina in a big bowl. Cover it and keep aside for 10 minutes. Grate tomatoes, onion, garlic and ginger separately. Finely chop green chillies and coriander leaves. Add enough water to the suji batter to make an appropriate consistency that is not too thick and not too runny to spread on a non-stick pan. Add salt, chilli flakes, oregano and all the grated and finely chopped vegetables. Mix all ingredients well.
Heat a non-stick pan. Spread little olive oil and spread two table spoons of the prepared batter in circular shape like uttapam. When the bottom surface becomes golden crisp, flip it around and cook from the other side until golden brown.Transfer to a serving plate and serve hot with tomato ketchup and green chutney.
