Ingredients:
For vadas-
Moong dhuli dal ½ cup
Hing powder a pinch
Salt
Oil
For kaanji water-
Water
Rai
Salt
Red chili powder 2/3 tsp
Method:
Wash moong dal and soak for two hours in water.
Drain the water and make a fine paste in food processor.
Add ½ tsp salt and hing powder. Beat properly.
Heat oil in a deep pan. Make small balls of thick dal paste and deep fry till cooked.
Boil water in a separate pan. Simmer it for 10 minutes after a boil comes.
Turn off the gas. Add 1 ½ tsp salt, 2/3 tsp of chili powder, 1 tsp rai and mix well.
Let water gets cool down at room temperature. When it is slightly warm, add fried moong dal vadas. Stir and keep in a glass jar in sun for three days.
Now it’s ready to serve.
Kanji vada and Holi go hand in hand. How can you imagine this festival without this teekha-khatta drink? The smell of dal vadas dipped in water. Ahhh! Bliss.
