It’s Mahashivratri, the festival dedicated to Lord Shiva, is on 4 March 2019 (Monday). One of the most auspicious Hindu festivals, Shivartri is observed by devotees with great enthusiasm chanting, meditating, and fasting before offering a puja with milk, bael leaves, bhang, dhatoora, fruits, sweets and many other things that the third God of the Holy Trinity liked.

Devotees of all age groups and genders keep a fast (vrat) on Shivaratri. Fasting, however, does not mean you have to starve yourself. You can have fruits and some ‘satvik’ vrat food. This Shivratri, try this delicious sabudana cutlet recipe as you celebrate the festival. Sabudana cutlets are corn flour-free and gluten-free. So they are ideal for any vrat day.

Preparation time: 30 minutes

Cooking time: 15 minutes

Ingredients:

Sabudana: 1 cup

Potatoes: 6 (large)

Green chillies: 3

Coriander leaves: ½ cup

Peanuts: 1/3 cup

Saindha namak to taste

Black pepper powder: 1 tsp

Oil to shallow fry

Method:

Wash the sabudana thoroughly in running water, and then drain all the water. Keep it aside in a closed container at room temperature overnight.

Boil potatoes. Peel and mash them properly.

Coarsely grind the peanuts.

Mix all ingredients well – mashed potatoes, soaked sabudana, ground peanuts, salt, pepper powder, green chillies and coriander leaves.

Make a stiff dough.

Take small portions out of this dough and make balls.

Press them gently to flatten them a little.

Heat oil in a non-stick pan.

Shallow fry cutlets on both sides until golden brown.

Serve with green coriander chutney made with saindha namak.
