Spiral pasta 2 cups
Green capsicum 1 cup
Yellow bell pepper 1 cup
Red bell pepper 1 cup
Cherry tomatoes 10
Olives
Almonds
Walnuts
Vinaigrette dressing 2 tbsp
Method:
Steam pasta cooked with a dash of olive oil. Drain off the water.
Cut green, yellow and red bell peppers into 1” cubes.
Cut cherry tomatoes into two halves.
Cut olives into rings.
Mix all the ingredients and chill.
Add the dressing just before serving and mix well.
Vinaigrette Dressing Ingredients:
Olive oil 3 tbsp
Vinegar 4 tbsp (white)
Freshly ground black pepper ½ tbsp
Salt
Garlic
Method:
Place all the ingredients in a deep bowl.
Blend well with a hand mixer.
Store in a closed airtight container.
