Weekend special: Stuffed Pizza

This delicious and crunchy stuffed pizza will outshine all other appetizers at your party. It is easy to make and kids just love it. I have kept it simple with just onion, paneer and curd-coriander chutney. You can add any vegetables to make your kids have healthy veggies in their diet. However, it is completely our choice.

Serves:  2

Preparation time: 30 minutes

Ingredients:

Pizza base                    1

Paneer                          150 grams

Capsicum                      1 (medium)

Onion                             1 (medium)

Onion rings                    ½ cup

Mozzarella cheese       ¾ cup

Salt                                  to taste

Black pepper powder    2/3 tsp

Soya sauce                       2 tsp

Vinegar                              2 tsp

Coriander chutney           2 tbsp

Fresh yogurt                      2 tbsp

Oil                                        1 tbsp

Butter                                  2 tbsp

 

 

Method:

Divide pizza base in two equal parts cutting it vertically with a sharp knife or pizza cutter.

Slice each half from the centre keeping the outer circumference intact from the edges.

Prepare the stuffing – Heat oil in a pan. Slice onion and capsicum fine. Add onion slices and saute for a minute. Add thin slices of capsicum. Saute for another minute. Add salt, pepper powder, soya sauce, and vinegar. Mix well on low flame for 10 minutes. Turn off flame. Add grated cheese. Mix well. Keep aside to cool.

Mix coriander chutney and yogurt well in a food processor.

Spread it inside the sliced pizza bases. Spread few onion rings over it.

Place the stuffing carefully and spread it evenly inside the pizza base without damaging it.

Heat a non-stick pan.

Melt little butter on it.

Roast stuffed pizza from both sides till golden.

Serve hot with tomato ketchup.
