Spinach is exceedingly healthy or you can say that eating spinach means eating pure health. This fibrous green has become so ubiquitous that people have found many different ways to eat it deliciously. Low in cholesterol and saturated fat, spinach rolls are a good source of protein, vitamins, minerals and dietary fibre.

Serves: 4
Preparation time: 20-30 minutes
Cooking time: 10-15 minutes
Ingredients:
Spinach leaves: 12 (large)
Paneer: 100 grams
Fresh bread crumbs 2 tbsp (white bread)
Green chillies: 2
Ginger paste: 1/2 tsp
Garlic paste: 1/2 tsp
Salt to taste
Red chilli powder: ½ tsp
Chat masala: 1 tsp
Mint leaves: 2 tbsp
Olive oil: 4 tbsp
For Batter:
Besan: 5 tbsp
Maida: 3 tbsp
Ajwain: ¼ tsp
Salt to taste
Water: as required
Method:
Mash paneer and finely chop the green chillies and mint leaves. Discard the corners of white bread and grind it to a crumbly powder. Discard the stems of the spinach leaves and wash them thoroughly. Mix paneer, ginger-garlic paste, green chillies, mint leaves, salt, chilli powder, chat masala and white bread crumbs. Make a thick batter having coating consistency mixing all batter ingredients. Spread spinach leaves. Spread a thin layer of batter on the spinach leaves. Place a teaspoon full of the paneer filling in the centre. Fold the sides first so as to seal the sides of the rolls so that oil does not enter while shallow frying. Roll the leaves upwards to make rolls. Heat oil in a non-stick frying pan. Dip the rolls in the batter one by one and shallow fry them until golden crisp flipping both the sides.
Serve hot with tomato ketchup and mint-coriander chutney.
