Raksha Bandhan Special Sweet Dish: Maal Pua

Raksha Banndhan falls on 7th of August for 2017. It is a wonderful festival to share the beautiful bond of siblings. It is the best time of the year to pamper dear ones with home-made sweets prepared with ample of love. Your loved ones like nothing more than a good sweet dish made all by yourself. Enjoy maal-pua this rakhi with your family.

Serves: 10

Preparation time: 60 minutes

Cooking time: 30 – 45 minutes

Ingredients:

Khoya 750 grams

Maida 150 grams

Meetha soda a pinch

Milk  1/2 cup

Pure ghee for frying

Sugar 6 glass

Water 4 glass

Milk 1 litre (full cream)

Condensed milk 1 tin

Method:

Prepare a dough mixing khoya, maida and meetha soda altogether very well. Knead it for at least 30 minutes adding little milk as required to make a soft but stiff dough.

Heat ghee in a deep flat frying pan.

Prepare small balls of the dough.

Make thin poories out of the balls with the help of rolling pin.

Fry them carefully one by one till they turn golden brown. The poories should not break.

Take them out on a kitchen towel and keep aside to get cool.

Sugar syrup – Boil water and sugar together stirring continuously on high flame. Turn the flame to low after a boil comes. Let it simmer for another half an hour. Keep stirring occasionally. Turn off the gas.

Put fried maal-puas in warm sugar syrup.

While serving drain them out one by one delicately from sugar syrup and place separately in rows in a serving tray.

Garnish with chilled rabri and serve.

Rabri: Take full cream milk. Give a boil. Let it simmer on low flame till it remains half in quantity. Keep stirring frequently, otherwise milk will start burning at the bottom.  Add condensed milk and stir well. Let it cook for another 15 minutes. Turn off the gas. Keep the rabri aside to cool at room temperature. Refrigerate it for few hours to make it chilled. You can make rabri a day before. Store it in an airtight container in refrigerator.
