You have a last minute New Year party to plan and you can’t figure out what to serve? Well, serving half-moons or half discs – mini half pizzas can be a great New Year party starter. For a fun change of pace, ditch the traditional sit-down big pizza slices in favour of the fun-frolic, cute mini snacks. The trick is to find a delicious snack recipe that mimics a traditional party menu. Serve your guests these Italian cocktail pizzas that require minimal preparation.

Ingredients:
Mini pizza base 6
Mozzarella cheese 200 grams (grated)
Mushrooms
Onion
Capsicum
Black olives
Sweet corn kernels 1/3 cup (boiled)
Tomatoes
Garlic flakes
Tomato puree ¾ cup
Tomato ketchup 2 tbsp
Oregano 1 ½ tsp
Red chilli flakes 1 tsp
Salt
Black pepper powder to taste
Olive oil
Method:
First make pizza spread – Heat oil in a pan. Add finely chopped garlic and saute for few seconds. Chop one onion fine and add into cooked garlic. Saute again for a minute. Add chopped tomatoes and cook till tender. Add salt, tomato puree, tomato ketchup and cook for few minutes or until the spread becomes thick. Turn off flame, add oregano, red chilli flakes and black pepper powder. Give a good stir to mix all ingredients well. Let it cool at room temperature.
For toppings – Cut another onion into half and then slice it into thin semi-circles. Cut capsicum into half and slice it into thin semi-circles. Cut mushrooms in thin slices.
Now, spread one tablespoon of spread on pizza bases.
Add vegetable toppings, boiled corn kernels and olives. Top with grated mozzarella cheese. Grill it in a preheated oven till cheese melts (two to three minutes).
Cut into two pieces from the centre to get two half-moons.
Serve with any cocktail or mocktail.
