Serves: 2 litres
Preparation time: 30 minutes
Ingredients:
Grapes: 1 kg
Sugar: 1 ½ kg
Water: 750 litres
Citric acid: 1 tsp
Potassium metabisulphite: A pinch
Method:
Thoroughly wash the grapes and take out their juice using a juicer.
In the meanwhile, mix sugar and water in a big container and put it on high flame. Let a boil comes.
Add citric acid and simmer it on low flame. After few minutes, the blackness of this sugar syrup will form a layer on the top surface of the boiling water. Remove it with the help of a sieve. Let it continue to boil for another 10 minutes. Turn off flame and let it cool.
Mix sugar syrup and grapes juice properly. Add potassium metabisulphite so that it does not get spoiled in a short period of time. Mix well and store in glass bottles. Keep refrigerated.
Pour two to three tablespoons of this squash in a tall glass, add chilled water to it.
Top with some ice cubes and garnish with two slit grapes on the rim.
Serve chilled.
If the grapes are too sweet, the quantity of sugar can be reduced. A preservative ‘potassium meta bisulphite’ is added to increase the shelf life of this squash. So, what are you waiting for? Get your hands on seasonal fresh grapes to make your own glass of grapes squash.
